Our Vineyards are located between the high hills of the Chianti and the Elsa valley and grow on soils that have their origin in the Pliocene, the soil varies slightly for one vineyard to another  . We do vinify each vineyard separately in order to express the differences of each position and choose in a second time the expression we prefer.

After a 48 hours of maceration at low temperature to extract the fruit aroma, fermentation starts naturally without any added yeast. The maceration time varies according to the grapes quality, vineyard, season indicatively it is 20 days. The wine then matures partly in 25hl wood barrels and partly in cement for at least 24 months.

It is a wine with a marked character, you will appreciate it especially in a meal, particularly with all the traditional dishes, pasta, carpaccio, pecorino cheese…
